About the role

Royal Mail Hotel is looking for a vibrant, engaging, and enthusiastic Head Sommelier to lead our wine program. The successful candidate will have extensive wine knowledge with the ability to:

  • Deliver an exceptional fine dining experience to restaurant guests
  • Deliver tailor-made and unique guests experiences including comparative wine tasting tours
  • Develop and lead the education for our front of house team
  • Collaborate with our wine retail and e-commerce team on content creation and club member experience

The successful candidate will have the expertise to develop creative pairings and matches for our innovative restaurant menus which are driven by our kitchen garden philosophy.

We are seeking an individual who has the drive and skills to become the custodian of our extensive cellar. The cellar presents a unique challenge with more than 30,000 bottles featuring 3,700 labels. You will become the encyclopedia of knowledge of our cellar and be responsible for stock management.

About You

  • Previous service experience in a fine dining establishment is essential
  • WSET level III or certified sommelier level 2 or equivalent
  • Current RSA and understanding of COVIDSafe practices in hospitality is advantageous
  • Incredible attention to detail, with an understanding it’s the 1% that makes a difference
  • Strong communication skills and computer literacy
  • Availability Thursday, Friday, and Saturday evenings
  • Evidence of COVID-19 vaccination
  • Unrestricted Australian driver’s licence

A remuneration package inclusive of accommodation will be negotiated based on skills and experience with the successful candidate.
